Ingredients
1. Almond Butter Honey Oat Bars
2. Egg Breakfast Cups
3. Strawberry Chocolate Overnight Oats
4. Healthier Frozen Breakfast Burritos
5. Sheet Tray Pancakes
Servings:
Instructions
1. Almond Butter Honey Oat Bars
  1. In a medium bowl, add oats, nut butter, and honey or maple syrup, and mix until well combined.
  2. Spray baking dish with cooking spray. Pour in mixture and spread evenly.
  3. Cover and place in freezer until firm.
  4. Cut into bars. Enjoy now or keep in the fridge until ready to eat.
2. Egg Breakfast Cups
  1. Preheat oven to 350°F (180°F).
  2. Beat eggs and season with salt and pepper, to taste.
  3. Add eggs halfway into each tin of a greased muffin tin.
  4. Add desired toppings.
  5. Bake for 20 minutes.
  6. Eat now or keep in airtight container in the fridge. Heat when ready to eat.
  7. Enjoy!
3. Strawberry Chocolate Overnight Oats
  1. In a mason jar, fill with rolled oats, almond milk, Greek yogurt, cocoa powder, and maple syrup. Stir until well combined.
  2. Place diced strawberries on top and seal jar.
  3. Soak the oats overnight.
  4. Place in fridge until ready to eat.
  5. Enjoy!
4. Healthier Frozen Breakfast Burritos
  1. In a large skillet over medium heat, cook turkey bacon according to package instructions. Remove and set to the side.
  2. Using the same skillet, add diced sweet potatoes and season with salt and pepper. Cook until soft. Remove from pan and set aside.
  3. Add diced red bell peppers and cook until softened. Remove from pan and set aside.
  4. Cook spinach, then set aside.
  5. Reduce heat to medium-low and pour in beaten eggs. Remove from pan once cooked.
  6. To assemble the burritos, place down parchment paper, then put the tortilla on top. Add scrambled eggs, sweet potatoes, spinach, bell pepper, turkey bacon, and cheese.
  7. Fold the left and right side of the burrito in, then fold the bottom up and roll tightly.
  8. Roll burrito into parchment paper.
  9. Enjoy now or place into a bag or reusable container.
  10. Transfer to the freezer. Freeze for up to 1 month.
  11. To reheat, remove burrito from parchment paper and wrap in a damp paper towel.
  12. Microwave for 3 minutes or until warm.
  13. Rest for one minute.
  14. Enjoy!

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, mix whole wheat flour and baking powder.
  3. Add in milk, applesauce, egg, and vanilla extract, and mix until well combined.
  4. Pour pancake mix on a greased baking sheet and evenly spread out.
  5. Add desired toppings onto the whole pan or place in different corners for a variety.
  6. Bake for 15 minutes.
  7. Cut into squares. Enjoy now or freeze for up to a month.
